This egg roll stir fry brings all the delicious flavors of an egg roll without the wrapper! Made with ground meat, cabbage, and a savory sauce, this quick and easy meal is perfect for busy weeknights. It's a healthy, low-carb option packed with protein and veggies.

  • 1 lb ground pork (or chicken, turkey, or beef)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 small cabbage, shredded
  • 1 cup carrots, shredded
  • 2 tbsp soy sauce (or coconut aminos)
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp red pepper flakes (optional)
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)

Instructions

  • Heat a large skillet over medium-high heat. Add the ground meat and cook until browned, breaking it apart with a spoon.
  • Add the diced onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
  • Stir in the shredded cabbage and carrots. Cook for another 5–7 minutes, stirring occasionally, until the vegetables are tender.
  • Pour in the soy sauce, sesame oil, rice vinegar, and red pepper flakes (if using). Stir well to combine.
  • Remove from heat and top with green onions and sesame seeds.
  • Serve hot and enjoy!

Notes

  • For a keto version, use coconut aminos instead of soy sauce.
  • Add cooked shrimp or tofu for a different protein option.
  • Serve over cauliflower rice for a more filling meal.
