1½ lbs boneless skinless chicken breasts, cut into 1-inch pieces
1 bunch asparagus, trimmed and cut into thirds
4 cloves garlic, minced
3 tbsp butter
1 tbsp olive oil
1 tsp Italian seasoning
Salt and black pepper, to taste
Juice of half a lemon
Fresh chopped parsley (optional)
Heat olive oil in a large skillet over medium-high heat.
Add the chicken pieces, season with salt, pepper, and Italian seasoning. Sear until golden and cooked through (about 5-7 minutes). Remove from skillet and set aside.
In the same skillet, add 1 tbsp butter and asparagus. Sauté for 3-4 minutes until tender-crisp.
Push asparagus to the side, add remaining butter and garlic. Sauté garlic for 30 seconds until fragrant.
Return chicken to skillet, drizzle lemon juice over, and toss everything to combine.
Garnish with parsley and serve hot.
For extra flavor, marinate chicken in garlic and lemon juice for 15 minutes before cooking.
You can swap asparagus for green beans or broccoli.
Make it spicy by adding red pepper flakes.
