  • 2 boneless, skinless chicken breasts, cut into chunks
  • 3 cups baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped

Instructions

  • Heat 2 tbsp olive oil in a large skillet over medium heat. Add potatoes, season with salt, pepper, paprika, and oregano, and cook for 10–12 minutes until golden and tender. Remove and set aside.
  • In the same skillet, add the remaining olive oil and butter. Add chicken, season with salt, pepper, and red pepper flakes, and cook for 6–8 minutes until golden brown and cooked through.
  • Return potatoes to the skillet, add garlic, and cook for 2 minutes.
  • Sprinkle parmesan cheese over the mixture, stir to combine, and cook for another 2 minutes until cheese melts.
  • Garnish with fresh parsley and serve immediately
