  • 1 small head green cabbage, finely chopped

  • 34 small Persian cucumbers, diced

  • 1 bunch green onions, chopped

  • 1/2 cup fresh basil leaves

  • 1/2 cup fresh parsley leaves

  • 1/4 cup fresh chives

  • 12 cloves garlic

  • 1/2 avocado

  • 1/4 cup olive oil

  • 2 tablespoons rice vinegar

  • 2 tablespoons lemon juice

  • 1/4 cup nutritional yeast

  • 1 teaspoon salt

  • 1/4 cup water (as needed for thinning)

Instructions

  1. Finely chop the cabbage, cucumbers, and green onions. Place them into a large mixing bowl.

  2. In a blender, combine basil, parsley, chives, garlic, avocado, olive oil, rice vinegar, lemon juice, nutritional yeast, and salt. Blend until smooth.

  3. Add water as needed to reach a pourable consistency.

  4. Pour the dressing over the chopped veggies and toss well.

  5. Serve immediately or refrigerate for up to 2 days.

Notes

  • Feel free to swap herbs based on what you have: cilantro or mint work well too!

  • Add protein like grilled chicken or chickpeas for a more filling meal.
