  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • ½ cup chicken broth
  • 1 cup spinach or kale, chopped
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add onions and garlic, sauté until fragrant.
  • Add ground turkey, season with salt, pepper, paprika, cumin, and chili powder. Cook until browned.
  • Stir in sweet potatoes, bell pepper, and chicken broth. Cover and cook for 10–12 minutes, stirring occasionally.
  • Add spinach or kale and cook for another 2 minutes until wilted.

 

  • Adjust seasoning and serve warm.

Notes

  • Substitute ground turkey with chicken or beef if desired.
  • Add black beans or quinoa for extra fiber and protein.
