1 lb ground turkey
2 medium sweet potatoes, diced
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon paprika
½ teaspoon cumin
½ teaspoon chili powder
Salt and pepper, to taste
2 tablespoons olive oil
½ cup chicken broth
1 cup spinach or kale, chopped
¼ teaspoon red pepper flakes (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add onions and garlic, sauté until fragrant.
Add ground turkey, season with salt, pepper, paprika, cumin, and chili powder. Cook until browned.
Stir in sweet potatoes, bell pepper, and chicken broth. Cover and cook for 10–12 minutes, stirring occasionally.
Add spinach or kale and cook for another 2 minutes until wilted.
Adjust seasoning and serve warm.
Notes
Substitute ground turkey with chicken or beef if desired.
Add black beans or quinoa for extra fiber and protein.
