These Sweet Strawberry Shortcake Cheesecake Rolls combine soft pastry, rich cheesecake filling, and fresh strawberries for a decadent treat.

  • 1 sheet puff pastry, thawed
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 tbsp cornstarch
  • ¼ cup powdered sugar (for dusting)
  • 1 egg (for egg wash)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a bowl, mix cream cheese, sugar, and vanilla until smooth.
  • In another bowl, toss diced strawberries with cornstarch.
  • Roll out puff pastry and cut into rectangles.
  • Spread cheesecake mixture on each piece, then top with strawberries.
  • Roll up and place seam-side down on the baking sheet.
  • Brush with egg wash and bake for 18–20 minutes, until golden brown.
  • Let cool, then dust with powdered sugar before serving.

Notes

  • Use fresh or frozen strawberries, but drain excess liquid.
